Enter: vegan avocado chocolate mousse.
While traditional mousse can be tricky to make, Chef K’s comes together in practically no time, and you only need a food processor (or blender) and a whisk to make it.
Plus, the mousse is packed with healthy fats, fiber, and antioxidants from the avocado base. (Btw, you can’t taste the avocado at all, if that’s a concern.) Top with her two-ingredient vegan whip and some chocolate shavings, and you’ve got a delightfully decadent dessert in under 10 minutes.

Ingredients:
Mousse:
Flesh of 2 ripe avocados (240g)
1/4 cup regular cocoa powder
1/4 cup Dutch cocoa or melted chocolate chips
1/4 cup Califia Farms Organic Almondmilk
1/2 teaspoon pure vanilla extract
1/8 teaspoon salt
1/4 cup maple syrup
Whipped topping:
1/2 cup Califia Farms Heavy Whip
3 tablespoons powdered sugar
1 tablespoon shaved chocolate
Instructions:
1. Combine all mousse ingredients in a blender or food processor until smooth and creamy.
2. Whisk heavy whip with powdered sugar until it has soft peaks.
3. Pour mousse into a ramekin or cup, top with whipped topping, and add chocolate shavings.
4. Devour!
